INGREDIENTS 100g Fresh Chilli’s 40g Fresh Ginger 20g Fresh Garlic 1kg Honey 150mls Water 1/2tsp Salt
Roughly chop your chilli, ginger and garlic, I like to grate my ginger but chopping will also work well. (be careful not to touch your eyes or face after handling fresh chilli’s and wash your hands well). Place in your blender and pulse until your happy with the consistency of your chunks.
Put all of your ingredients into a pot and bring to a simmer, cook for aproximately 20-30 minutes. Check for your desired consistency by taking a spoon full and allowing it too cool before pouring it off the spoon. If it is too thick then add a little boiling water, if it is too runny then cook a little longer. Pour into steralised jars to preserve or just eat it all up! Yum :)
